My fabulous friend at FreeFromGluten.com has a great Millet recipe to share with us today!
Rice Cooker Millet – Gluten Free Breakfast Recipe (2 servings)
2 1/2 cups Water
1/2 cup Millet
1/2 tsp Salt
1 1/2 TBL Coconut Oil
1 tsp Vanilla (gluten free) or 1/4 teaspoon vanilla powder
1/4 cup Agave (you can use honey too-but I’d try 1/8 cup to start and add more if it needs it.)
Optional: Raisins and Cinnamon
Okay, before you start this recipe, let me tell you a bit more about millet - it honestly has NO TASTE. There is a reason for the salt, coconut oil,and vanilla. Don’t skimp on these items (especially the salt), they help sooo much!
Put water, millet, and salt in rice cooker and let it cook like normal rice.
Once the millet is cooked and still hot, mix in the coconut oil, agave, and vanilla. You need to add the coconut oil while hot, because it is a solid at room temperature.
Now you have an easy, gluten free breakfast. Make it a routine! Just put the millet in the rice cooker and then jump in the shower while it’s cooking! It’s super simple and delicious.
